A LYME Regis business has announced the recruitment of a top general manager for its sea front restaurant.
Owners of By The Bay restaurant and wine bar, Tony and Stephanie Colston welcomed Jason Lindley into the business last week.
Mr Lindley comes with a good reputation built from years of work at top restaurants including celebrity chef John Burton-Race’s The New Angel, The Royal Crescent in Bath and opening a restaurant on Plymouth’s Barbican.
Mr Lindley said: “I used to spend a lot of time down here; I used to come on holiday for about 10 years. What better place could you ask for to work.
“The job was originally advertised for Bridport, then my agent said it was in Lyme and I thought ‘even better’.
“Everything about this new job I’m really looking forward to. I love it, I’m looking forward to the challenge and meeting all the locals, whomever they may be.”
The new look restaurant sources as much local produce as possible, especially from local fisherman, and hopes to extend the menu in the coming months.
Owner Tony Colston said: “It’s excellent news to have Jason on board. It is what the business needs and I think it will take it up a level on the service and type of food we are offering.
“We are very proud to have Jason, he’s done a lot of work around here and his reputation has been built in some quite interesting restaurants."
The restaurant and wine bar is currently closed Monday and Tuesdays but are back open on Wednesdays during the winter, and will be open seven days a week when the clocks go back.
